Overnight pickled vegetables are a quick, easy way to add bold, tangy flavor to fresh produce without traditional canning. Using a simple vinegar-based brine, you can transform vegetables like cucumbers, carrots, and onions into crisp, flavorful pickles in as little as 12–24 hours—perfect for enhancing meals or snacking straight from the jar.

Ingredients
  

  • 1 head Cauliflower
  • 6 small mini bell peppers
  • 4 Persian cucumbers
  • 3 zucchini
  • 3 carrots
  • 1 jalapeno
  • Garlic Cloves to taste
Brine
  • 4 cups filtered water
  • 2 cups white vinegar
  • ½ cup sugar
  • 3 Tbsp Celtic salt or sea salt
  • Peppercorns in each container
  • Bay leaves In each container

Method
 

  1. Prep your vegetables
    Wash and slice them evenly.
  2. Make the brine
    Heat vinegar, water, salt, and sugar until dissolved.
  3. Pack the jar
    Place vegetables and flavorings into a clean jar.
  4. Pour the brine
    Cover vegetables completely.
  5. Cool and refrigerate
    Let the jar cool to room temperature, then refrigerate. In as little as 12 hours, your pickles will be ready—though 24 hours gives the best flavor.
