Why You’ll Love This 2-Hour Bread Recipe

There are many bread recipes out there, but this one is especially dear to me because it’s my moms recipe! She used to bake bread for us when I was little and now I bake the same bread to my kids! This recipe is fast, simple, and reliable.

Here’s why this recipe works so well:

  • Ready in about 2 hours
  • Uses basic pantry ingredients
  • Perfect for beginner bakers
  • Soft and fluffy interior
  • Golden, slightly crisp crust

Why No-Knead Bread Works

Kneading normally develops gluten, which gives bread its structure. In a no-knead method:

  • Time replaces kneading
  • The dough slowly develops gluten on its own
  • Moist dough and fermentation create a light, airy crumb

Total Time 1 hour 45 minutes

Cuisine: American, French

Ingredients

  • 4 cups Flour all-purpose, 00 flour
  • 2 cups water 100–110°F to activate yeast
  • 1 tbsp instant yeast
  • 1 tbsp Salt Sea salt
  • 1 tbsp sugar feeds the yeast

Method

  1. Activate the Yeast
In a large mixing bowl, combine warm water, salt, sugar, and yeast. Let it sit for about 5 minutes until the mixture becomes foamy. This means the yeast is active
  2. Mix the Dough
Add the flour to the mixture. Stir with a dough whisk until a shaggy dough forms.
  3. Let the Dough Rest

Cover the bowl with plastic wrap or a kitchen towel and let it sit at room temperature 30 min. During this time, gluten forms naturally. It should double in size.
  4. Shape the Dough

Lightly flour your surface and gently turn out the dough. Fold it over itself a few times and shape it into a rough ball. Should not be sticky.
  5. Second Rise
Let the shaped dough rest for 30 minutes while the oven preheats to 350°F.
  6. Bake the Bread
Bake for 25–30 minutes, or until the crust turns golden brown and the loaf sounds hollow when tapped.
  7. Cool Before Slicing
Allow the bread to cool for about 10 minutes before slicing to help the texture set properly.

Notes

Don’t add too much flour.
A slightly sticky dough creates softer bread.
