Why No-Knead Bread Works
Kneading normally develops gluten, which gives bread its structure. In a no-knead method:
- Time replaces kneading
- The dough slowly develops gluten on its own
- Moist dough and fermentation create a light, airy crumb

Ingredients
Method
- Activate the Yeast In a large mixing bowl, combine warm water, salt, sugar, and yeast. Let it sit for about 5 minutes until the mixture becomes foamy. This means the yeast is active
- Mix the DoughAdd the flour to the mixture. Stir with a dough whisk until a shaggy dough forms.
Let the Dough Rest
Cover the bowl with plastic wrap or a kitchen towel and let it sit at room temperature 30 min. During this time, gluten forms naturally. It should double in size.Shape the Dough
Lightly flour your surface and gently turn out the dough. Fold it over itself a few times and shape it into a rough ball. Should not be sticky.- Second Rise Let the shaped dough rest for 30 minutes while the oven preheats to 350°F.
- Bake the Bread Bake for 25–30 minutes, or until the crust turns golden brown and the loaf sounds hollow when tapped.
- Cool Before SlicingAllow the bread to cool for about 10 minutes before slicing to help the texture set properly.
Notes
Don’t add too much flour.
A slightly sticky dough creates softer bread.
