  • 3-4 pounds beef chuck roast
  • Montreal Steak Seasoning
  • Olive Oil Drizzle
  • ½ Purple Onion
  • 1 whole Garlic
  • 4 springs Rosemary

Method
 

  1. Preheat the oven to 325°F (163°C).
  2. Pat the roast dry and season all sides with salt and pepper.
    Season generously.
  3. Add carrots, onion, rosemary around it.
  4. Braise low and slow.
    Cover and cook for 3-4 hours, or until the meat is fork-tender.
  5. Rest and serve.Let it rest for 10–15 minutes before slicing or shredding. Spoon the rich pan juices over the top.

Notes

If the Chuck Roast is tough, It likely needs more time. Toughness means collagen hasn’t fully broken down.
Feel free to add any vegetable that you like. 
I use a Dutch Oven for my chuck roast and it requires less time as it, it’s own little oven. Check after 2 hours.
